How to cook it

  1. Rinse the rice and slice the lap cheong thinly on the diagonal.

  2. Roughly chop the bok choy.

  3. Warm the oil in the rice cooker bowl (or a heavy pot) and stir-fry the lap cheong and ginger for 1 minute until fragrant.

  4. Add the rice, water and soy sauce, stir once, and start the rice cooker on its normal cycle (or bring to a boil, cover and simmer 15 minutes on the stove).

  5. Fold the chopped bok choy into the rice for the final 5 minutes of cooking, so it steams through without turning mushy.

  6. Fluff with a fork and serve straight from the pot.
