How to cook it

  1. Use rice cooked the day before, or at least a few hours ahead and spread out to cool, so the grains stay separate in the wok.

  2. Toss the chicken with 1 tsp of the soy sauce and a pinch of the pepper. Heat 1 tbsp of the oil in the wok on high heat and stir fry the chicken 4 to 5 minutes until cooked through and lightly browned, then lift it out.

  3. Scramble the beaten eggs in the same wok with a little more oil until just set, and lift them out too.

  4. Add the rest of the oil, then the chopped garlic and green chilies for 20 seconds, then the finely chopped carrot, capsicum and spring onion whites, and toss 2 minutes.

  5. Add the rice and toss on high heat until it sizzles, then the chicken, eggs, the rest of the soy sauce, the vinegar, pepper and salt, and toss until evenly coloured and piping hot. Finish with the spring onion greens.
