How to cook it

  1. Cut the chicken into bite-size pieces and toss with the cornstarch.

  2. Stir the soy sauce, oyster sauce, hoisin, and sesame oil with 1/4 cup water for the sauce.

  3. Heat the neutral oil in a wok over high heat and stir-fry the chicken until browned and cooked through, about 6 minutes.

  4. Add the garlic, ginger, bell pepper, and celery and stir-fry for 3 minutes.

  5. Pour in the sauce and toss until it thickens, about 1 minute.

  6. Stir in the cashews and scallions and serve over rice.
