How to cook it

  1. Rinse the rice and bring to a boil with 8 cups water.

  2. Reduce to a low simmer and cook, stirring occasionally, until the rice breaks down into a thick smooth porridge, about 35 minutes, adding more water as needed.

  3. Roll the ground pork into small balls and drop into the porridge for the last 5 minutes.

  4. Season with the light soy sauce and white pepper.

  5. Ladle into bowls and let each diner stir in a raw egg.
