How to cook it

  1. Soak the glass noodles in warm water for 10 minutes, drain and cut them into shorter lengths.

  2. Heat the oil in a wok over medium heat and fry the red curry paste and hung lay curry powder until fragrant, about 1 minute.

  3. Add the pork and stir-fry until cooked through, then add the water, tamarind, palm sugar and fish sauce and bring to a simmer.

  4. Add the long beans in short lengths, the quartered Thai eggplants, the bamboo shoots, torn lime leaves and sliced lemongrass, and cook until the beans are just tender, about 4 minutes.

  5. Toss in the glass noodles and stir-fry until they soak up the sauce and turn glossy, about 2 minutes, and serve with sticky rice. Northern families make kaeng hoh the day after a feast from the leftover curries; this version starts from scratch for an ordinary night.
