How to cook it

  1. Soak the glutinous rice in water for at least 4 hours or overnight.

  2. Drain well and set the rice in a bamboo steamer basket lined with cheesecloth, or a regular steamer lined the same way.

  3. Steam over boiling water until the grains are translucent and tender, about 20 minutes, flipping once halfway.

  4. Turn out onto a plate and fluff.

  5. Serve warm, pinching off portions by hand, the staple for a third of the country.
