  1. Rinse the lentils.

  2. Heat the olive oil in a saucepan over medium and cook the onion, garlic, and bell pepper until soft, about 6 minutes.

  3. Stir in the chili powder and smoked paprika for 30 seconds, then add the lentils and broth and bring to a boil.

  4. Reduce to a simmer, cover, and cook until the lentils are tender, about 22 minutes.

  5. Stir in the tomato sauce, tomato paste, ketchup, brown sugar, mustard, salt, and pepper and simmer uncovered until thick and saucy, about 8 minutes.

  6. Pile the mixture onto the buns and serve.
