How to cook it
-
Cook the noodles in boiling water until just tender, then drain and toss with a little oil so they do not stick.
-
Slice the onion and cut the bok choy into thick pieces, keeping stems and leaves separated.
-
Heat half the oil in a wok over high heat and sear the beef until just browned, about 2 minutes, then set aside.
-
Add the remaining oil and fry the garlic until fragrant, about 20 seconds.
-
Add the onion and bok choy stems and stir-fry 2 minutes.
-
Add the bok choy leaves, noodles, oyster sauce, and soy sauce, and toss over high heat until everything is hot and evenly coated, about 3 minutes.
-
Return the beef to the wok and toss to combine.
-
Serve hot, straight from the wok.
