Cut the corn tortillas into small squares and fry in the hot oil until crisp and golden, then lift out most of them, leaving a little oil in the pan.

Add the onion, jalapeno, and tomato and cook until softened, about 4 minutes.

Beat the eggs with the salt, return the crisp tortilla pieces to the pan, and pour in the eggs.

Scramble gently until the eggs are just set and the tortillas are woven throughout, about 3 minutes.
