Ingredients
- 2 cups sprouted moong (green gram)
- 1 chopped onion
- 1 chopped tomato
- 1 chopped green chilies
- 1 tsp grated ginger
- 1/2 tsp cumin seeds
- 1/4 tsp turmeric
- 1/4 tsp red chili powder
- 2 tbsp neutral oil
- 2 tbsp chopped cilantro
- 1/2 lemon
- 1/2 tsp salt
How to cook it
- Heat the oil in a pan over medium heat and let the cumin seeds sizzle, then add the onion, ginger, and green chili and cook until the onion softens, about 3 minutes.
- Stir in the tomato, turmeric, and red chili powder and cook until the tomato breaks down, about 3 minutes.
- Add the sprouted moong and salt, mix well, cover, and cook for 6 to 8 minutes, stirring once or twice, until the sprouts are just tender but still have a little bite.
- Squeeze in the lemon juice and scatter the cilantro over the top.
- Serve hot on its own or with a slice of bread.
