How to cook it

  1. Soak the cashews in hot water for 10 minutes, then blend them smooth with a splash of the water.

  2. Heat the oil in a large pot and cook the onion, garlic, ginger, and cardamom until soft, about 7 minutes.

  3. Stir in the coriander, turmeric, and half the garam masala and cook until fragrant, about 1 minute.

  4. Add the mixed vegetables with a splash of water, cover, and cook until nearly tender, about 12 minutes.

  5. Pour in the coconut milk and cashew cream, season with salt, and simmer gently until the vegetables are tender and the sauce thickens, about 8 minutes.

  6. Stir in the remaining garam masala, finish with cilantro, and serve over the basmati rice.
