How to cook it

  1. Soak the cashews in hot water 15 minutes, then blend with the green chilies to a smooth paste.

  2. Whisk the yogurt and cream together with the cashew-chili paste, ginger garlic paste, crushed peppercorns, garam masala, lemon juice and salt.

  3. Cut the chicken into large pieces, prick them lightly with a fork, and coat well in the marinade. Cover and refrigerate at least 2 hours, or overnight for the best flavour.

  4. Heat the oil in a wide pan over medium-high heat and lay the chicken in without crowding, letting the excess marinade cling.

  5. Cook 6 minutes a side, turning once, until the outside is lightly charred in spots and a thermometer reads 165F at the thickest piece.

  6. Rest 3 minutes, scatter with coriander leaves, and serve with lemon wedges.
