  2. Combine the rice, coconut milk, water, turmeric, bruised lemongrass, bay leaves, and salt in a pot.

  3. Bring to a boil, stirring once to distribute the turmeric evenly.

  4. Cover and cook on low until the liquid is absorbed, about 15 minutes.

  5. Remove the lemongrass and bay leaves, rest 5 minutes, then fluff with a fork and serve.
