Print or share this recipe
Nem Ran (Hanoi Fried Spring Rolls) is Vietnamese home cooking, eaten at lunch and dinner. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.

How to cook it
-
Soak the glass noodles and wood ear in warm water for 10 minutes, drain, cut the noodles into short lengths and the wood ear into thin shreds.
-
Finely shred the kohlrabi and carrot and squeeze out the excess water with your hands.
-
Mix the ground pork with the noodles, wood ear, kohlrabi, carrot, eggs, minced shallots, fish sauce and black pepper until evenly combined.
-
Brush a rice paper sheet lightly with water so it just softens, spoon a line of filling near the bottom edge, fold in the sides and roll up firmly; repeat with the rest, keeping the rolls apart so they do not stick.
-
Heat the oil in a wok to medium, about 325°F, and fry the rolls in batches, turning, until deep golden and crisp, 10 to 12 minutes. Gentle heat is what stops rice paper from bursting.
-
Drain on a rack, cut each roll in two and serve with lettuce, herbs, rice or rice vermicelli and a bowl of nuoc cham. Rolling is a family job for a weekend, and extra rolls freeze well before frying.
