How to cook it

Cut the tofu into thick slabs and the scallions into short lengths.

Bring the dashi, soy sauce, mirin, and sugar to a simmer in a wide pot.

Add the beef and shiitake and simmer, separating the beef, until just cooked, about 3 minutes.

Nestle in the tofu and scallions and simmer 5 minutes more so the tofu takes on the broth.
