How to cook it

  1. Heat the oil in a heavy pot and brown the chicken pieces on all sides, about 8 minutes.

  2. Add the sliced onion and julienned carrot and cook 6 minutes until softened.

  3. Stir in the rinsed rice, whole garlic cloves, salt, and pepper.

  4. Pour in water to cover the rice by an inch and bring to a boil.

  5. Cover, lower the heat, and simmer 20 minutes without stirring until the rice is tender.

  6. Rest 5 minutes off the heat, fluff, and serve hot straight from the pot.
