How to cook it

  1. Pour the warm milk over the bread cubes in a large bowl and let them soak for 10 minutes, until softened.

  2. Melt 1 tbsp of the butter in a skillet, cook half the onion until soft, then stir it into the soaked bread along with the parsley, flour, nutmeg, and 1 tsp of the salt until the mixture holds together.

  3. Shape the mixture into 8 firm dumplings, then lower them into a large pot of gently simmering salted water and cook for 20 minutes, until firm and cooked through.

  4. Meanwhile, melt the remaining butter in a saucepan, cook the remaining onion until soft, then add the mushrooms and cook for 6 to 7 minutes, until golden.

  5. Pour in the vegetable broth and simmer for 5 minutes, then stir in the cream and the remaining salt and pepper and simmer for 3 minutes more, until slightly thickened.

  6. Lift the dumplings out with a slotted spoon, plate them, and spoon the mushroom cream sauce generously over the top.
