How to cook it

  1. Bring the eggs to a boil, then simmer 9 minutes, cool in cold water, and peel.

  2. Cut the pork belly into large chunks.

  3. Heat the oil in a heavy pot over medium heat and fry the garlic until fragrant, about 1 minute.

  4. Add the pork and sear on all sides, about 5 minutes.

  5. Stir in the dark soy sauce, sugar, and star anise, coating the pork evenly.

  6. Add the water and peeled eggs, and bring to a simmer.

  7. Cover and simmer over low heat, stirring occasionally, until the pork is very tender and the sauce has reduced and thickened, about 70 minutes.

  8. Remove the whole spices and serve hot alongside rice.
