How to cook it

  1. Cut the eggplant into thick batons.

  2. Heat half the oil in a skillet over medium-high heat and fry the eggplant in batches until soft and lightly browned, about 5 minutes per batch; set aside.

  3. Soak the dried chilies in hot water 10 minutes, then drain and blend with the shallots and shrimp paste into a paste.

  4. Heat the remaining oil in the skillet and fry the paste over medium heat until darkened and fragrant, about 6 minutes.

  5. Stir in the tamarind paste and salt and cook 1 minute more.

  6. Fold the fried eggplant back into the sambal and toss gently to coat, warming through 2 minutes.

  7. Serve hot alongside rice.
