How to cook it

  1. Soak the dried chilies in hot water 10 minutes, then drain.

  2. Blend the chilies, shallots, garlic, and turmeric into a smooth paste.

  3. Heat 2 tbsp oil in a small pan and fry the paste over medium heat, stirring often, until fragrant and darkened, about 6 minutes.

  4. Stir in the tamarind paste, palm sugar, and salt and cook 1 minute more, then let cool slightly.

  5. Score the fish a few times on each side and rub the spice paste all over, working it into the cuts.

  6. Let the fish marinate at least 15 minutes.

  7. Heat a grill or grill pan to medium-high and brush with the remaining oil.

  8. Grill the fish, turning once, until charred at the edges and cooked through, about 6 minutes per side depending on thickness.

  9. Finish with a squeeze of lime and serve hot over the jasmine rice.
