  1. Cut the pork belly into large chunks and slice the bamboo shoots into thin strips.

  2. Melt the sugar in a heavy pot over medium heat, swirling, until it turns a light amber caramel, about 4 minutes.

  3. Add the shallots and stir 30 seconds, then add the pork and toss to coat, searing on most sides, about 5 minutes.
