  1. Bring the water to a boil with the lemongrass and dried fish.

  2. Add the squash and corn and simmer until nearly tender, about 10 minutes.

  3. Add the eggplant and long beans and simmer 5 minutes more.

  4. Stir in the moringa leaves and sweet potato leaves and cook just until wilted.
