How to cook it

  1. Marinate the beef in the soy sauce, calamansi juice, and crushed garlic at least 20 minutes.

  2. Drain the beef, reserving the marinade, and sear in the hot oil in batches until browned, about 1 minute per side.

  3. Set the beef aside and saute the onion rings in the same pan until soft and beginning to caramelize.

  4. Return the beef and the reserved marinade to the pan, season with the black pepper, and simmer until the sauce reduces slightly, about 3 minutes.

  5. Serve hot with rice, the onions piled on top.

When to cook it

Bistek Tagalog (Beef in Soy, Calamansi, and Onions) takes about 40 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at lunch and dinner. Nothing in the calendar rules it out, so it is a year round dish.
