How to cook it

Heat 1 tbsp neutral oil in a wok or large skillet over high heat and scramble the eggs until just set, then remove.

Add the remaining oil and stir-fry the carrots and garlic for 2 minutes.

Add the peas and rice, breaking up any clumps, and stir-fry until the rice is hot and slightly crisp, about 4 minutes.

Return the eggs, pour in the soy sauce and sesame oil, and toss to coat.

Stir in the scallions and serve.
