  1. Rinse the millet in a fine mesh strainer until the water runs clear.

  2. Toast the millet in the dry pot over medium heat for 1 minute, stirring, until fragrant.

  3. Add the water, bring to a boil, then reduce to a low simmer.

  4. Cook uncovered 30 minutes, stirring now and then, until the millet is soft and the porridge has thickened and turned pale gold.

  5. Stir in the salt and serve hot.
