How to cook it

  1. The night before, soak the glutinous rice in plenty of water for at least 6 hours, then drain well.

  2. Toss the rice with the salt and steam it in a lined steamer basket over boiling water, covered, until glossy and tender, about 30 minutes, fluffing once halfway.

  3. Slice the Chinese sausage thinly on the diagonal and fry it in a dry pan until the fat runs and the edges crisp, about 3 minutes.

  4. Cut the cha lua into thin strips.

  5. Warm the oil in a small pan, pour it over the sliced scallions in a heatproof bowl and stir in a pinch of salt to make the scallion oil.

  6. Pack the sticky rice into bowls, top with the sausage, cha lua and pork floss, spoon over the scallion oil, scatter with fried shallots and finish with a few drops of soy sauce. Most mornings xoi is bought wrapped in a leaf on the way to work; at home it is a weekend breakfast.

When to cook it

Xoi Man (Savory Sticky Rice with Chinese Sausage and Pork Floss) takes about 50 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at breakfast and lunch. Nothing in the calendar rules it out, so it is a year round dish.
