  1. Blanch the pork ribs in boiling water 2 minutes to remove scum, then drain and rinse.

  2. Combine the ribs, ginger and water in a pot and bring to a boil.

  3. Reduce to a gentle simmer, cover, and cook 50 minutes, until the ribs are tender.

  4. Cut the corn cobs into thick rounds and the carrot into chunks, add to the pot, and simmer 25 more minutes, until the vegetables are soft and sweet.

  5. Season with salt and serve; this is the most kid-loved soup in the country.
