  1. Bring a pot of water to a boil and blanch the pork ribs for 3 minutes to remove impurities, then drain and rinse well.

  2. Return the ribs to the pot with the fresh water and ginger and bring to a boil, skimming any foam.

  3. Reduce to a gentle simmer, cover partially, and cook until the pork is tender, about 20 minutes.

  4. Add the napa cabbage and simmer until soft and translucent, about 6 minutes.

  5. Season with the white pepper and salt, tasting and adjusting.
