Ingredients

  • 3 eggs
  • 4 bread slices
  • 1 small, finely chopped onion
  • 1 finely chopped green chilies
  • 2 tbsp chopped cilantro
  • 1/4 tsp red chili powder
  • 1/4 tsp salt
  • 2 tbsp neutral oil

How to cook it

  1. Whisk the eggs in a bowl with the chopped onion, green chili, cilantro, red chili powder, and salt until well combined.
  2. Heat half the oil in a wide pan over medium heat and pour in the egg mixture, tilting the pan so it spreads into a thin, even layer.
  3. While the egg is still wet on top, lay the bread slices flat over it, pressing gently so they stick to the egg.
  4. Cook for 2 minutes until the egg sets and turns golden underneath, then flip the whole thing bread side down and drizzle the rest of the oil around the edges.
  5. Cook for another 2 minutes until the bread is lightly toasted, then cut into pieces and serve hot.
