How to cook it

  1. Hard boil the eggs, peel them, and halve them lengthwise.

  2. Heat the oil in a pan and let the cumin sizzle, then cook the onions, garlic, and ginger until deep golden, about 9 minutes.

  3. Stir in the turmeric, coriander, and chili powder, then add the chopped tomatoes and cook into a thick masala, about 8 minutes.

  4. Add a splash of water and salt to loosen the masala into a thick coating gravy and simmer for 4 minutes.

  5. Lay the egg halves in the masala cut side up, spoon the sauce over them, and warm through for 4 minutes.

  6. Stir in the garam masala, finish with cilantro, and serve hot with roti or paratha.
