How to cook it

  1. Cut the chicken into bite size pieces and mix it with the egg, 3 tbsp of the corn flour, the maida, ginger garlic paste, kashmiri chili powder, pepper, salt and 1 tsp of the soy sauce until every piece is coated. Rest it 15 minutes.

  2. Deep fry the chicken in hot oil in batches for 5 to 6 minutes until crisp, golden and cooked through, then drain it on paper.

  3. Heat the 1 tbsp oil in a wok on the highest heat, add the chopped garlic, ginger and slit green chilies for 30 seconds, then the onion and capsicum cut into squares and the spring onion whites, and toss 2 minutes so they stay crunchy.

  4. Add the rest of the soy sauce, the red chili sauce, ketchup, vinegar and sugar, then the water with the last 1/2 tbsp of corn flour stirred into it, and cook 1 minute until the sauce turns glossy.

  5. Add the fried chicken and toss on high heat for a minute until coated, then scatter the spring onion greens over. Eat it with fried rice or hakka noodles, or leave out the water for the dry version that is eaten as a starter.
