Heat the oven to 375F and spread a thin layer of enchilada sauce in a baking dish.

Soften the finely chopped onion and garlic in the olive oil with the cumin and salt, about 5 minutes.

Combine most of the cheddar and Monterey Jack with the softened onion for the filling.

Warm the corn tortillas, fill each with the cheese mixture, roll, and set seam-side down in the dish.

Pour the remaining sauce over the top and scatter with the rest of the cheese.
