  1. Marinate the prawns with the ginger garlic paste, red chili powder, kashmiri chili powder, turmeric, coriander powder, black pepper, lemon juice and salt for 15 minutes; prawns take spice fast, so this is enough time.

  2. Heat the coconut oil in a wide pan over medium-high heat and add the curry leaves, letting them crackle for a few seconds.

  3. Add the marinated prawns in a single layer, without crowding the pan, and fry 2 to 3 minutes a side until they turn pink and opaque and the masala clings dry to them.

  4. Do not cook them past this point or the prawns turn rubbery.

  5. Serve hot with a wedge of lemon, rice, or as a side with kanji.
