Marinate the chicken with the ginger garlic paste, red chili powder, turmeric, coriander powder and salt for at least 20 minutes.

Heat the oil in a wide, heavy pan, pop the mustard seeds, then add the dried red chilies and half the curry leaves and let them sizzle a few seconds.

Add the sliced onion and fry until golden, about 8 minutes.

Add the marinated chicken and sear 8 minutes over high heat, turning the pieces so they pick up colour rather than stew.

Add the water, cover and cook 15 minutes until the chicken is tender, then uncover and cook 8 to 10 minutes more, stirring often, until the water has cooked away and the masala clings dry to the chicken.

Finish with the remaining curry leaves, slit green chilies and coriander leaves, and serve hot.
