How to cook it

Whisk the sesame paste, chili oil, rice vinegar, sugar, garlic, and 2 tbsp soy sauce with 1/2 cup warm water into a smooth sauce and divide among four bowls.

Heat the neutral oil in a skillet and brown the ground pork, breaking it up, until crisp, about 6 minutes.

Add the ginger and remaining soy sauce and cook until the pork is glazed, about 2 minutes.

Boil the noodles until tender, adding the bok choy for the last minute, then drain.

Divide the noodles and bok choy over the sauce in each bowl.

Top with the pork and scallions and toss together before eating.
