How to cook it

  1. Cut the tofu into large cubes and pat dry.

  2. Heat the oil in a skillet over medium-high heat and fry the tofu, turning, until golden on most sides, about 6 minutes, then set aside.

  3. Melt the sugar in the same pan over medium heat until it turns a light amber caramel, about 3 minutes.

  4. Add the shallots and stir 30 seconds, then pour in the soy sauce and 1/3 cup water.

  5. Bring to a simmer and stir in the black pepper.

  6. Return the fried tofu to the pan and simmer gently, spooning the sauce over it, until it soaks up the flavor and the sauce clings, about 8 minutes.
