How to cook it

  1. Rinse the black beans and pressure-cook with the bay leaf and 8 cups of water for 20 minutes.

  2. Add the smoked pork and simmer, uncovered, 40 minutes until the meats are tender.

  3. Meanwhile dice the bacon and cook it in a skillet until crisp, then saute the diced onion and minced garlic in the fat.

  4. Slice the linguica into rounds and add it along with the bacon and onion mixture to the beans.

  5. Simmer 30 minutes more, mashing a few beans against the pot to thicken the broth, and season with salt and pepper.

  6. Discard the bay leaf and serve hot with orange slices on the side, a weekend centerpiece meant to feed a crowd.
