  1. Cube the tofu and pan-fry in the oil until golden on the edges, then set aside.

  2. In the same pan, saute the garlic and onion until soft.

  3. Add the carrot and long beans and stir-fry 2 minutes.

  4. Add the bean sprouts and soy sauce, and stir-fry just 90 seconds so the sprouts stay crisp.

  5. Return the tofu to the pan, toss briefly, and serve hot with rice.
