How to cook it
-
Heat a teaspoon of butter in a pan and saute the chopped onion until soft, about 2 minutes.
-
Add the tomato, green chili, red chili powder, and salt, and cook for 2 minutes until the tomato softens.
-
Crumble in the paneer and toss gently for 2 minutes until it warms through and picks up the spices, then stir in the cilantro and chaat masala and take off the heat.
-
Spread the paneer filling over two bread slices and top each with the remaining slices to close the sandwiches.
-
Butter the outside of the sandwiches and grill them on a hot tawa or pan, pressing lightly, until both sides are golden and crisp, about 2 minutes per side.
-
Cut in half and serve hot.
