Hainanese Chicken Rice

How to cook it

Rub the chicken with 1/2 tsp salt and poach it in a pot of gently simmering water with 2 garlic cloves and 1 tbsp ginger until just cooked through, about 25 minutes.

Lift out the chicken and plunge it into ice water to firm the skin, then reserve 1.5 cups of the poaching liquid.

Toast the rice in the neutral oil with the remaining garlic for 1 minute, then add the reserved poaching liquid, chicken broth, and 1/2 tsp salt.

Bring to a boil, then cover and cook on low until the rice is tender and fragrant, about 15 minutes.

Blend the scallions, remaining ginger, soy sauce, sesame oil, and remaining salt with 2 tbsp of the poaching liquid into a dipping sauce.

Slice the chicken and serve over the rice with sliced cucumber and the ginger-scallion sauce alongside.
