How to cook it

  1. Cut the tofu into thick slabs, pat dry, and pan-fry in the oil over medium-high heat until golden on both sides, about 6 minutes total.

  2. Push the tofu to the side and add the ginger, stirring 20 seconds until fragrant.

  3. Add both soy sauces, the sugar and the water, and bring to a simmer.

  4. Cook 5 minutes, spooning the sauce over the tofu, until it reduces and coats the pieces.

  5. Stir the cornstarch into a tablespoon of cold water and swirl it in to thicken the sauce.

  6. Scatter with scallions and serve.
