How to cook it

  1. Cut the tofu into thick slabs and pan-fry in half the oil until golden on both sides, about 6 minutes, then set aside.

  2. Heat the remaining oil in the same pan and stir-fry the pork until just cooked, about 2 minutes.

  3. Add the doubanjiang and garlic and stir-fry 30 seconds until the oil turns red and fragrant.

  4. Add the green pepper and stir-fry 1 minute, then pour in the soy sauce and water and bring to a simmer.

  5. Return the tofu to the pan and simmer 5 minutes, spooning the sauce over gently so the slabs stay whole.

  6. Stir the cornstarch into a tablespoon of cold water and swirl it in to thicken, then scatter with scallions and serve.
