How to cook it

Heat 1 tbsp of the oil in a saucepan and cook the onion, garlic, and jalapeno until softened, about 4 minutes.

Add the diced tomatoes and cumin, simmer until slightly thickened, about 10 minutes, and season with salt; this is the ranchero sauce.

Warm the refried beans in a small pot.

Warm the tortillas in a dry skillet, then keep them warm wrapped in a towel.

Fry the eggs in the remaining oil until the whites are set and the yolks are still runny.

Spread a little beans on each tortilla, top with a fried egg, and spoon the ranchero sauce over the top. Scatter with cotija and cilantro and serve.
