How to cook it

  1. Boil the eggs 9 minutes, cool in cold water, and peel.

  2. Fry the shallots in the oil until crisp and golden, drain and set aside.

  3. Fry the peeled eggs in the same oil until the whites blister and brown, then drain.

  4. Simmer the tamarind paste, palm sugar and fish sauce in a small pot until syrupy.

  5. Halve the eggs and arrange on a plate.

  6. Spoon the tamarind sauce over and scatter with the fried shallots and dried chilies.
