How to cook it

  1. Soak the wood ear in warm water for 15 minutes until soft, trim off the hard knots and slice it into strips. Meanwhile julienne the ginger. Young ginger is milder and juicier if the market has it.

  2. Slice the chicken thinly. Thigh stays juicier, but skinless breast works exactly the same way and is a little leaner.

  3. Heat the oil in a wok, fry the chopped garlic for a few seconds, then add the chicken and stir fry on high heat for about 3 minutes until it is nearly cooked.

  4. Add the ginger, the onion cut in wedges and the wood ear, and toss for 2 minutes. Season with the oyster sauce, light soy sauce, fish sauce and sugar, and splash in the water so there is a little sauce.

  5. Toss in the scallions cut into short lengths, and the split chilies if anyone wants heat, then serve straight away with rice as one of the dishes on the table.
