How to cook it

  1. Cut the fish into large chunks, and cut the okra and eggplant into pieces.

  2. Heat the oil in a pot over medium heat and fry the curry leaves until fragrant, about 30 seconds.

  3. Stir in the fish curry powder and fry 1 minute, then add a splash of water to loosen it into a paste.

  4. Add the remaining water and tamarind paste, and bring to a simmer.

  5. Add the eggplant and simmer 5 minutes, then add the okra and simmer 4 minutes more.

  6. Season with the salt, then slide in the fish and simmer gently, without stirring hard, until just cooked through, about 8 minutes.

  7. Serve hot alongside rice.
