How to cook it
-
Blanch the pork hock in boiling water for 10 minutes, drain and scrape off any stray hairs. Hard-boil the eggs, peel them and set them aside.
-
Pound the garlic, cilantro root and white pepper into a coarse paste and fry it in a large dry pot until fragrant, then add the palm sugar and let it melt and darken slightly.
-
Add the pork, both soy sauces, five-spice powder, star anise, cinnamon stick, salt and water, bring to a boil, then cover and simmer very gently, turning now and then, until the skin is soft and the meat falls from the bone, 2 to 2.5 hours. Add the peeled eggs for the last 40 minutes.
-
Blanch the Chinese broccoli in boiling salted water for 1 minute, and stir the sliced chilies into the vinegar for the table.
-
Slice the pork, skin and all, and serve over the rice with a halved egg, a spoonful of the braising liquid, the greens and the pickled mustard greens, with the chili vinegar alongside. Usually bought; the home pot is a weekend cook that covers two meals.
