How to cook it

Heat 1 tbsp oil in a wok over medium-high heat, scramble the eggs until just set, and set them aside.

Heat the remaining oil in the wok and fry the garlic until fragrant, about 30 seconds.

Add the ground pork and stir-fry, breaking it up, until browned and cooked through, about 6 minutes.

Add the diced onion and cook until softened, about 2 minutes.

Add the cold rice, breaking up any clumps, and toss over high heat until heated through and starting to char slightly at the edges, about 4 minutes.

Add the diced tomato, fish sauce, soy sauce, and sugar and toss to combine, about 1 minute.

Fold the scrambled egg back in along with the scallions.
