How to cook it
-
Fry a quarter of the egg noodles in the hot oil, a small nest at a time, until crisp and golden, about 1 minute, and drain them for the topping.
-
Spoon the thick cream from the top of the coconut milk into a pot and fry the red curry paste, curry powder and turmeric in it over medium heat until fragrant and the oil separates, about 3 minutes.
-
Add the chicken drumsticks and turn them in the paste, then pour in the rest of the coconut milk and the broth.
-
Simmer gently, partly covered, until the chicken is tender at the bone, about 30 minutes, then season with the fish sauce and palm sugar.
-
Boil the remaining noodles for 1 to 2 minutes, drain and divide among bowls.
-
Ladle the curry and a drumstick into each bowl, top with the crispy noodles and cilantro, and put sliced shallots, pickled mustard greens, lime and chili flakes on the table. In Chiang Mai khao soi is mostly a bought lunch; this home pot suits a weekend.
