How to cook it

  1. Cut the radish into half-inch cubes, toss with the salt and sugar, and let sit 30 minutes until it releases liquid.

  2. Drain the radish, reserving a little of the liquid.

  3. Mix the gochugaru, fish sauce, minced garlic, and ginger with a splash of the reserved liquid into a thick paste.

  4. Toss the radish and sliced scallions with the paste by hand until every cube is coated red.

  5. Pack into a clean jar and let sit at room temperature a day before refrigerating; it is ready to eat right away and improves over a few days.
